Hello! :)

I have a small question... Is there any reason why one would want to have multiple sprite and music banks? What would be the effect if one just had one of each?

You COULD just have one of each.

You might have more to help organize
the sprites images into orderly groups,
if there are lots of them.

Well in Beans I have one image bank for the menu screen and one for the game. This way I don't have to load graphics that aren't needed.

In other games you might put all the animation frames for one character in its own bank, making things easier to organise. Image 0 for each bank could be walking left for example, then you could use the same animation code for all sprites but they'd look different because they're using different banks.

Hope this helps!
